Ingredients for Vegan Chocolate Chip Cookies
- ½ cup refined coconut oil, melted
- ½ cup vegan granulated sugar
- ½ cup brown sugar
- ½ cup unsweetened vanilla almond milk (60 ml)
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon salt
- 1 bag (10 oz) vegan semisweet chocolate chips (1 1/2 cups)
Preparation
Pre-heat the oven to 350°F (180°C). In a large bowl, whisk together the coconut oil, granulated sugar, brown sugar and salt until well mixed. Whisk in almond milk and vanilla until the sugar dissolves. Sift in the flour, baking powder, baking soda and salt until dough begins to form. Stir in chocolate chips. Drop tablespoonfuls of dough on to ungreased baking sheets 2′′ apart. Bake for 12-15 minutes or until the chocolate cookies become light brown. Cool completely for 2 minutes.
