According to this review published in Critical Reviews in Food Science and Nutrition, the process of frying foods creates toxic compounds such as advanced glycation end products (AGEs). Such compounds can increase your long-term risk of cancer, inflammation and type 2 diabetes.
If you want a healthier alternative that resembles the texture of French fries, you can roast sweet potatoes as they’re much more nutritious.
