The FDA recommends staying away from buffet foods that have been kept at room temperatures for several hours as they can be contaminated with harmful microorganisms. Non-refrigerated foods are breeding grounds for bacteria which multiplies faster when left out of the refrigerator.
Although there are strict safety rules that restaurants and caterers have to comply with to prevent food-borne illnesses, it’s not uncommon to end up with food poisoning after eating buffet food at an office party or home party. Reheating it will not do the trick as the bacteria might have already reached dangerous levels.
