As explained by the Independent and the European Food Information Council, mushrooms should go nowhere near the microwave. That’s because these tiny, edible fungi contain proteins that can be “invaded” by enzymes and bacteria if stored incorrectly. This includes keeping them at room temperature.
Reheating improperly stored mushrooms can cause an upset stomach and indigestion. The only safe temperature to warm them is at least 158 degrees Fahrenheit, according to the European Food Information Council.
