Rice is nice. It is one of the most consumed foods on the planet, eaten by more than half of the world’s population. Besides begin versatile and tasty, it also represents a high-risk food in terms of foodborne illness.

Uncooked rice can be the perfect, dry environment for Bacillus cereus spore. The surprising thing is that when cooking the rice, the warm and moist conditions also activate the spores and help them grow into bacteria. That’s why it’s extremely important to store cooked rice properly in the fridge, at the right temperature, below 5 degrees Celsius.

Captain’s tip: Serve the rice as soon as you cook it and then store it in the refrigerator. If you want to eat it again, make sure you reheat it all the way through.
