Also known as butter beans due to their buttery texture, lima beans are fiber all-stars. Like most legumes, it has a high iron content which helps replenish your energy stores. They are low in sugar and fat so are a great source of fat-free protein, making them a good choice for vegans, and, you guessed it, extremely rich in our good friend potassium.

Fresh lima beans can be best consumed in the summer and fall when they are in season, but they are worth looking for off-season as well.
