Vegan recipe – Vegan Creamy Cauliflower Horseradish Soup

Despite this Cauliflower Horseradish soup’s creamy, velvety texture, it is really low in calories and fat, making it the perfect option for a light, evening meal.

First of all, the star ingredient, cauliflower, is a great source of vitamins and minerals. In fact, it contains almost every vitamin and mineral your body needs. It is also rich in fiber which reduces inflammation and promotes digestive health and antioxidants which protect your cells from harmful free radicals.

The other ingredient, horseradish, provides a variety of micronutrients such as calcium, potassium, magnesium, folate which protect against cancer, infections, and brain diseases.

If you want to feel good about eating, join the cauliflower party!

This velvety Cauliflower Horseradish Soup is even more delicious if you drizzle it with extra virgin olive oil or toasted pumpkin seeds. I also serve it with caramelized onions and toasted bread croutons. It doesn’t get any more delicious than this!
