Ingredients
- 2 tbsp olive oil
- 4 garlic cloves, chopped
- 2 large onions, chopped
- 3 tbsp mild chili powder (or sweet pimiento)
- 3 tbsp ground cumin
- 3 tbsp cider vinegar
- 2 tbsp brown sugar
- 2 x 400g canned chopped tomatoes
- 2 x 400g canned black beans
- salt and pepper
Preparation
Heat the olive oil in a large pot and saute the onions and garlic until they become soft. Add the chili powder and cumin and stir for another few minutes. Add the vinegar, tomatoes, sugar, season to taste with salt and pepper and cook for 10 minutes. Lastly, add the beans and cook for another 10 minutes, while stirring from time to time.
Serving suggestion
This vegan black bean chili dish can be served with rice and garnished with fresh chopped cilantro or sour cream. It’s the perfect plant-based meal, with a classic chili flavor that will l leave you wanting for more.
