Here’s what you’ll need for vegan pulled jackfruit burger:
Ingredients
- 2 Tbsp olive oil
- 1Â finely chopped onion
- 3 minced garlic cloves
- 450 g jackfruit, fresh or canned (equivalent to 3 jackfruits)
- 1 Tbsp cumin
- 1 Tbsp chili powder
- 1 Tbsp vegan Worcestershire
- 1 Tbsp liquid smoke
- 2 cups vegetable stock
- 100-120g bbq sauce
- salt and pepper to taste
Preparation
Preheat your oven to 350ºF (180ºC). In case you have fresh jackfruit, cut it in half and remove the core, seeds and coating. Rinse and dry what’s left of the fruit. In a large pan, cook the onions and garlic until they become soft, then add the jackfruit, Worcestershire, liquid smoke and spices. Stir for 2-3 minutes then add the vegetable stock.
Mix and then leave it to simmer for 35 minutes, until the liquid is absorbed and the jackfruit’s texture becomes meaty. Stir every 10 minutes to make sure the jackfruit is shredded. Add the BBQ sauce and cook without lid for another 10 minutes. If you want the mix to be stickier, add one more Tbsp of BBQ sauce.
