That being said, our meal plan is for Atkins 40, which, as the name suggests, limits the carb intake to 40 grams a day.

The beauty of a breakfast muffin is that it can be made ahead and reheated for a grab-and-go type of breakfast, or else made to order and eaten in a leisurely fashion.
